Coat chicken in 1 table spoon of olive oil and lightly salt and set aside. Rinse and dry potatoes then cut in half and rinse again. Coat in 1/2 table spoon olive oil and set aside. Rinse broccoli and prepare by cutting off the amount you need. Coat in 1/2 tablespoon olive oil, juice of half a lemon and almond slices. Season with Mrs. Dash to taste. Usually about 1/2 Table spoon is just right. Cook: Place everything in a large roasting pan lined with foil. Season everything else with remaining Mrs. Dash and then place in preheated oven set at 375 degrees. Roast skin side down for 25-35 minutes or until fully cooked.
I stepped out of the truck and gently eased the camera strap around my neck. It was cold and my breath cloud was a decent reminder of that. I slowly made my way over to towards the tree where this magestic Bald Eagle sat and gazed over the land. With every crunching step he grew more curious and I'm sure cautious of my presence. He never moved, simply stared in my direction and let me have my pictures. I quietly thanked the gorgeous bird and went about my way.
The Valley was hit with a massive snow storm this weekend. I attempted to get over Wolf Creek Pass but to no avail. This was video I took of the pass as well as a shot of some trees covered in the powdery stuff.
